Description
A quick, simple recipe for chicken pepperoni.It might also be nice breaded and fried.
Ingredients
4
chicken breasts (pounded flat) 20
slices of pepperoni (more/less) 4 sli
cheese (cheddar, monterey jack, your call) 8
fresh basil leaves 1 ds
salt and pepper 1 T
olive oil 1 ds
mixed, dried herbsInstructions
Run chicken under cold water and pat dry with paper towels.Lay out flat on a sheet of plastic wrap and pound flat.Lay out the slices of pepperoni onto the chicken, even amounts on each breast.Layer the basil leaves on top of the pepperoni.Cover with cheese, add a little salt and pepper.Roll up, seal closed with tooth pics.Rub with olive oil, and place in a bakind dish, seam side down, sprinkle with the mixed herbs.Bake at 350°F for 30
